Use this marinade on your favourite protein – cook's recommendation is salmon.
Ingredients
- 30g ginger
- ¾ cup (180ml) soy sauce
- ½ cup (125ml) brown sugar
- 1 tsp sesame oil

Combine the ginger, soy sauce and brown sugar in a small saucepan with ¼ cup (60ml) water and bring to the boil.

Reduce the heat to medium and simmer for 3–4 minutes, stirring to dissolve the sugar. Remove from the heat and stir in the sesame oil.

Leave to cool completely before using. Store in the refrigerator for up to 1 week.
