Swap out your usual fries for this panko-crumbed halloumi version.
Ingredients
- 750g halloumi
- 2 tbs (40ml) olive oil
- 2 cups (150g) panko breadcrumbs
- ½ cup (75g) plain flour
- 1 egg, beaten
- ¼ cup (60ml) milk
- Tzatziki, to serve

Using a sharp knife, cut the halloumi into 1cm strips.

Heat the oil in a large frypan over medium heat. Add the breadcrumbs and toast, stirring constantly, for 5–10 minutes or until golden brown. Remove from the heat and leave to cool slightly.

Preheat the oven to 180°C. Line two baking trays with baking paper.

Add the egg and milk to a small bowl and mix to combine. Place the flour, egg and milk mixture, and the toasted breadcrumbs in three separate shallow bowls. Dip the halloumi strips first into the flour, gently shaking off the excess, and then the egg mixture and then the breadcrumbs, pressing to coat well.

Arrange the coated halloumi onto the trays in a single layer.

Bake for 15 minutes until the halloumi is warmed through and the coating is crispy. Season with salt and pepper. Serve warm, with a side of tzatziki.
