This refreshing, herbal syrup is a stunning addition to cocktails and sparkling water.

Makes 1 cup

Time

3–4 hrs

 

Ingredients

  • 30g ginger
  • 1 cup (200g) sugar
  • 4 sprigs thyme (see tip)

Method

Combine the ginger, sugar, thyme and ½ cup (125ml) water in a small saucepan and bring to the boil.

Reduce the heat to medium. Boil, stirring, for 5 minutes or until the sugar has dissolved.

Leave to steep for 3–4 hours before using. Store refrigerated for up to a week.
