A great twist on a traditional meat skewer for the barbecue, this recipe is simple yet packed with flavour.

Ingredients

  • 500g paneer, cut into 3cm cubes
  • ½ cup tandoori paste
  • 1 cup Greek yoghurt
  • 2 Spanish onions, cut into 3cm pieces
  • 2 capsicums, cut into 3cm pieces
  • 1 small Lebanese cucumber, grated

Method

In a large bowl, mix paneer, tandoori paste and 2 tbs of yoghurt. Thread the paneer, onion and capsicum onto skewers. Salt grated cucumber and set aside.

Lightly grease a barbecue grill, then preheat to high. Cook skewers for 5 mins or until vegetables have softened slightly.

Meanwhile, squeeze excess liquid from the grated cucumber. Mix with remaining yoghurt, and season well. Serve skewers with cucumber yoghurt dip.
