Whether it's breakfast or brunch, taro fritters are a healthy yet delicious alternative. Perfectly crispy and easy to make!
Ingredients
- 500g taro, washed, peeled and coarsely grated
- 2 eggs
- ¼ cup (35g) all-purpose flour
- 2 spring onions, chopped
- ¼ bunch coriander, finely chopped, plus extra leaves for garnish
- 2 cloves garlic, crushed
- ¼ cup (60ml) olive oil
- Poached eggs, to serve (optional)
- Avocado, to serve (optional)
- Spring onion, sliced, to serve
Method

In a mixing bowl, combine the taro, eggs, flour, spring onions, chopped coriander and garlic. Season well with salt and pepper and mix until thoroughly combined.

Heat 1 tablespoon of oil in a large frypan over medium heat. Add 1⁄³ cupfuls of fritter mix into the pan and press down gently to make about 8cm circles, making sure not to overcrowd the pan. Fry for 2 minutes on each side, or until golden brown and cooked through. Remove the fritters onto a plate and keep warm. Repeat with the remaining mix until all the mix is used up.

Serve the fritters warm, as part of a breakfast platter, topped with poached eggs, avocado, spring onion or any of your favourite toppings
