Ingredients
- 1kg cauli florets, steamed
- 200g roasted almonds, roughly chopped
- 50ml lemon juice
- 1 bunch mint, leaves picked, washed
- 1 bunch coriander, leaves picked, washed
GINGER DRESSING
- 3 tbs finely grated garlic
- 3 tbs finely grated ginger
- 1 fresh bird’s eye chilli, seeded and chopped
- ¾ cup rice wine vinegar
- ¾ cup light soy sauce
- 7 tbs garlic oil
- 4 tbs sesame oil
- 3 tbs caster sugar
- 1 tbs ground black pepper

Preheat your grill to high. Combine all the ginger dressing ingredients in a bowl and season with sea salt to taste. Place the steamed cauli florets in a baking tray and pour the dressing over, turning to coat. Grill the cauli florets for 4–5 minutes or until golden and slightly crunchy.

Serve the roasted cauli florets at room temperature. Garnish with roasted almonds, lemon juice and fresh herbs.
